Official partners of Bocuse d’Or Winners Academy, Champagne Mandois 1735 and Caviar Kaspia play on a same field: Haute Gastronomie, highest quality and unique taste. For that reason, Caviar Kaspia – which was founded in Paris in 1927 and played a leading role in the introduction of caviar as a unique and mythical delicacy worldwide – proposed to define the best pairing betwen one of its caviar and the newly released Champagne Mandois Victor Vintage 2002. Pure, mineral, intense, with a great complexity gained through an ageing in oak casks, this Cuvee Victor 2002 paired magnificiently with Oscietre Tradition, a caviar obtained from the Russian Sturgeon (Gueldenstaedtii) which gives the name to the Oscietra Caviar. This top quality caviar features large grains which melt on the tongue unfolding their unmistakable flavour with a mild nutty taste. Toasted nuts’ aromas and minerality form Champagne Victor 2002 added a new dimension to this tasting. Moreover the iodin notes and the consistent texture of Oscietre Tradition highlighted the fresh and long finish of this 100% Chardonnay (Blanc de Blancs) selected from more than a half century old vines.
